Andy's Irish Stout Stew



Here is the recipe for the Irish Stout Stew that I served at my St. Patty's Day party:

Note:  This recipe is as close to what I made as I could remember.  I typically don't cook by recipe but more by feel and taste but if memory serves this is the recipe.

2 lbs. Tenderized stew meat
5 md. potatoes
2 c. sliced, peeled carrots
2 md. onions
Fistfull of fresh Thyme
2 md. garlic bulbs
2 small tomatoes
3 cans Cambell's Beef Broth
2 c. Dry Stout
4 TBSP Olive Oil
1 c. flour
2 TBSP Black Pepper
1 tsp. Cayenne pepper
2 whole Bay leaves
1 8 oz. can Tomato paste
1 TBSP Season All

Combine flour, cayenne and pepper in a bowl
Coat Stew meat with 3 TBSP olive oil and sift through flour mix
Add 1 TBSP olive oil to crockpot on high
Add stew meat and sear
Add finely chopped onions, tomatoes, garlic and 1 can beef broth.
Cook on high for 3 hrs or until reduced and caramalized
Dilute tomato paste with a small amount of water
Reduce temperature to low and add peeled diced potatoes, carrots, tomato paste, bay leaves, season all and 2 cans beef broth
Cook on low for 3 hrs.
Add dry stout and destemmed chopped thyme
Cook on low for 1 hr.
Season to taste.

Although I didn't add it bacon would be a nice addition to this stew, but bacon is a nice addition to almost everything.  If I were to add the bacon I would omit the season all.



 

Sounds freakin yummy! You cook like me, a fistfull of thyme, and 2 bulbs of garlic- nice!

 

I like your style, oh chef Andrew.  But what's the deal with Medium garlic cloves, how about a fistful.
Gonna make it this weekend, with venison, home canned tomato sauce, Mennonite bacon, just gotta find that fistful of fresh thyme.

Didn't get to it this weekend.  9" of snow & everyone decided to stay home. 
Next Sunday, stew, brew, & bonfire.

 

that would be great with a fistfull (or two) of venison.  Fresh Thyme is sold in the produce section of most grocery stores.  Let us know how it turns out.  Oh and I am talking about the whole bunch of garlic not just the cloves.  So I guess that would be a fistfull or more. smile  The more garlic the better!

That's right up my alley.  Just planted my garden for this year and I have about 1/6 of it in different types of garlic.
I will be swimming in garlic next year.

Garlic Beer????  hmm

Nope, just can't get my head around that one.
Eating garlic, washing it down with beer, yeah.



 

Found a recipe for garlic beer in my Homebrew Favorites book.  I am temped but I really don't think that it's something that I could drink alot of.  maybe a three gal batch or smaller.

Ok, throw it out there.  Let's see it.
I could be crazy enough to make some. 
Probably have to drink it all by myself.

 

If you're gonna make garlic beer, you should also try making a horseradish beer.  mmm, a beer that clears your sinuses....

 

You could dump some of the horseradish beer on your prime rib.   Or make a delicious sauce out of it.   Man this is getting better and better...... smile

This recipe sounds fabulous with beef or venison!!  I'm going to make it on our next cold snap (which I think is probably next week).

As for garlic beer - I think it's one of those things I would have to try before being convinced!  But I like the idea of horseradish beer and here's why:  I love the idea that beer can be a remedy for a sinus cold! smile
