Beer Batter
Hi, I love beer battered fish and onion rings fried up.
I know frying things isnt a great idea but every once
in a while it doesnt hurt to treat your taste buds!
To make enough batter for a pound of fish fillets
all you need is
a heaping cup of all purpose flour
a normal size can of beer
three pinches of salt
a few shakes of tobasco
stir the beer into the flour and salt unitl its nice and creamy
you wont need all of the beer, so just drink whats left.
shake in some tobasco sauce if you like, and stir.
I recommend patting your food dry and coating with a sprinkle
of flour before you dip it in to the batter.
Fry it up, yum!

I wonder if you could substitute corn meal for some of the flour to make corn dogs? Or maybe hush puppies?
Reminds me of my grandmothers fish fries when I was a kid. I loved the stuff.
I'm going to try this recipe this week. Does anyone know the best type of onion for onion rings? I've never made deep fried fish or onion rings.
If I was going to fry up some onion rings, and now I am thinking about it, I would use the really big sweet yellow ones. they caramelize nicely in a pan with some oil so they should be nice and sweet to go along with a salty spicy beer batter.
Let us know how the rings come out. Might be able to get my wife to sneak some "good" food into all the rabbit food that gets served up around here. ![]()

I'm going to have a mini fish/onion ring fry in my back yard today. I'll let you guys know how it goes!
Usually when I fry fish, I soak it in half and half and dredge it in a mixture of cornmeal with some black and cayenne pepper. i usually use canola oil, it's healthy, you know. ![]()
For vegetables in the beer batter, besides onions, some red, yellow or orange peppers are tasty too. Some people like pickles deep fried, but I could never warm up to them. Here in Wisconsin, we are big on deep fried cheese curds. If you can find really fresh ones they are the best.
So I say fish and veggies fried in canola oil, all washed down with a homebrew, has to be healthy!
And when you have the oil hot, funnel cakes for desert. (Do them first, so they don't taste like fish)
You may also want to check on the prep work of the onions. I agree vidalias will prolly be the tastiest, however the natural enemy of anything fried is water. I believe if you preslice the rings and give them a buttermilk soak first, then it will cause a barrier while it is cooking and not let out as much steam to the batter. This is what usually causes the ring to shrink, then slide out in one bite leaving you with a fistful of crumble and no yummy.
Not sure on the process, but something like that.
It's taken me forever to get this posted but I did make the onion rings and they turned out delicious! I used valdalia onions as recommended and yum yum!!
