Beer Cheese
I don't have a specific formula for it, but I've made this twice now and had some really good success with it. I've just been buying the sharp cheddar cheese spread and adding about 1/6th of a bottle of beer to the mixture. I then mix it together with a fork for about 5 minutes or until the cheese becomes more of a dip than a spread. That's it!
Adding any tabasco sauce?

I have not added any Tabasco sauce, although I do think it should be added. Really this is a simple recipe - start with a relatively small amount of beer until you get the consistency you want. The more you add the more viscous your sauce will get. I would also add the Tabasco sauce sparingly.
Again, one bit of advice: use pretzels to dip in the sauce - extremely good!
Tried it, it was good with buttery crackers, with tobasco added a kick but the spice was only one demensional, would be nice to have a better spicy option.
Hm, now I haven't done this, but if I was going to make beer cheese this is the route I might go...
Block of Velveeta (or whatever cheese fits your fancy)
Can of Rotelle (it's basically diced tomato, green pepper, etc. and has a nice spicy zing to it)
Bottle of favorite IPA/IIPA (hops will accentuate the spices, making it more spicy)
Jimmy Dean sausage (not the links, comes in spicy and not spicy)
Mix it all together in a pot, heat, stir, eat and feel like you're going to die of a heart attack. You can pretty much dip anything you like in this. Nachos (regular or lime), pretzels (regular or stick), sandwiches, your dog...you get the idea.

I'd like to try this, and I think I'd experiment with jalapenos instead of Tabasco.
I've had good sharp cheddar spread from Costco that comes in a red plastic tub that would probably be a good start.
I saw at Food Lion Kraft special cheezes inthose littl jars. there was one that was made with beer..... and I think it was a german cheese spread.
I like the cheese spread recipe, though Ill omit the beer and sausage. Crumple up some turkey bacon and add some olives and green peppers and have a cold beer with it.
