Marinate for meat?

Have you used wine to marinate meat? I have poured a little on beef in the past before cooking.

I also know someone who pours beer on sausage while BBQing. He uses aluminum foil to keep the beer from flowing through the grate.

I assume the alcohol breaks down the meat somewhat and makes it more tender?

Food, something I know about.
I've never used wine on steak, like a T-bone or porterhouse,  a white wine is not bad for a splash on fillet minion, unless you're adding gravy.
It goes better on chops.
Saute apple slices on a low med.low heat in butter,AFTER, turning chop, give it a slash just before
you take it off the heat. Give it a minute or two to simmer before taking it off, place apple slices on top.


If you want to try something on a steak, JD works well, you don't want to let it
soak more then  a couple hours, not over night, the alcohol will dry it out and make it tuff.

I've used red wine to marinate meat.  I also have a friend who recommends using some Jack to marinate steak in.  Haven't tried that, but I plan to.  I have used apple cider to marinate pork, and that came out well.

Of course, I have also cooked brats in beer and onions prior to putting them on the grill.  Always a football Sunday favorite.  My parents used to steam chicken in beer, which was also very good.

 

How can a beer-cooking discussion be complete without beer can chicken!

 

One of my favorites is coming up.
Basting with bourbon on thanksgiving. Kinda gives the bird a smokey flavor.
It's step by step with illustrations so you can't go wrong.
It's a good recipe.

Tried this last year, it's great. You gotta try this.
Try it with wild turkey, which gives the bird and almost completely different flavor. Kinda robust.
If you want to call it that.
Since turkey just goes with thanksgiving, they go hand in hand.

I've used smoke beer for meat before. I believe it was Aecht Schlenkerla Rauchbier (Marzen)

 

Marv, did you actually make that recipe?

 

My mother do that.  She used to marinate meat with a wine.  But I didn't know what kind of wine it is.  It really have a good taste specially when you let the  meat absorb the wine thorougly before cooking. So delicious.
