dry malted barley/corn as an ingredient in beer
My local general store sells dry malted barley/corn. Would I rather just use dextrose in a pinch. Haven't
Seen any recipes where corn malt is used.
I've seen corn sugar used as an alternative to dextrose, but not malted barley/corn. Is it a 50/50 mix of the two maybe? Malted barley extract and corn sugar perhaps.
I haven't even heard of corn malt before. I guess there is no reason why it couldn't be malted like any other grain, but I am not sure what the point would be. Used with barley malt it will convert anyway, from what I understand. Also whole grain corn had a fair amount of oil in it. Not sure how that would affect the finished beer.
Sounds like a feed product to me. Not something I would necessarily brew with.
Trying to remember the brewery that was on The Session that used malted corn in nearly all of their beers. I've heard of it being used in continental pilsners and such.
