My first real Belgian Triple

I just had my first Belgian triple today.  Maredsous belgian abbey ale.  WOW, totally took me by suprise,  I was just not expecting the vast flavors that came from the bottle, sweet fruity, wood, peach,  you could almost count the layers of every level of taste.  Plus it packs a whollop, knocking me on my ass right now.  if you have a specialty liquor store near you, definately pick this up, this one is a 750ml bottle, and I didn't see a smaller one.  A word of advice, get a friend to drink it with, or you will be misspeling things too.  ha ha ha.

 

The Maredsous is very yummy....you should also try Duvel..one of my favorite Belgian Ales, and on a different spectrum than Maredsous...Chimay is another great drink to not pass over...

 

I've got a Red and a Blue Chimay that I'm letting age......it said on the insert with the speciality pack that they were better after a few years.......mine is about a year old now smile

 

It is better...I had some Red that was almost two years old, and it was fantastic!  The flavors were so deep, and slightly different....I wish I could some on hand without drinking it.  They say aging makes a lot of beers better...I have some Utopias and Westvleteren aging right now....those will probably be opened this year.....

 

I need an invite for the Utopias..big_smilebig_smilebig_smile

 

I wish I had the patience to properly age some of my beers, I am drinking an Abby Ale right now, it's my 2'nd run.  It has aged 3.5 months now that it is almost gone.  from start to finish, it has got a lot more mellow, the alcohol bite isn't near as noticible now.  it's about 10% to 11% abv.

I got my first two vessels from Ebay, and that was the 2005 batch I believe.  Both checked out to be authentic too, as far as I know.  I still haven't opened one of them; the other is pretty much empty.  For the 2007 batch, I was lucky enough to have someone tell me, I think someone here told me actually.  I know of a couple big stores that get some, and they were able to hold it for me.  It does go fast.  I heard that there is this one guy, who has 100 vessels from each release aging quietly.  Obviously, he has connections with someone at SA....

 

I brewed the Striking Gold Belgian Strong from AHA's big brew day last year and gave them about four months before I started partaking of them and really wasn't all that impressed with them.  A little bit of a cider like flavor and a fair amount of phenolic flavors.  So after forgetting about them for another couple month I decided to break them out again and they had mellowed into this great array of fruity esters and pear/apple notes.  The phenolics were still there but had relaxed tremondously now blending very well with the rest of the complexities of this brew.  I was amazed how much this had changed in the course of 8 months and now wish I hadn't bothered touching them until now.  This is more of an American style Trippel but still along the same lines.  I will make this style again and hide it away for at least a year before breaking them out.
