First bottling question.
I've got a Belgian Wit that i just checked today to see how it was doing.
It started at 1.060 (approx) and today, seven days later is at 1.012.
It tastes great, a little flat though ![]()
The first three days of fermentation were so aggressive I actually had to change my airlock out twice. Now it's a lot slower, and I actually put it into secondary this afternoon, where it is bubbling between 3 and 5 times a minute. It is sitting around 72-76F, and has been for the whole brewing.
Is it safe to prime and bottle tomorrow or should I give it a few days?

I would give it a couple weeks in the secondary....at least a week.....after it quits fermenting, if it's bubbling 3-5 times every minute it's not ready to bottle because it's still fermenting.....the easiest way is to take a hydrometer reading and when you get the same reading three days in a row it should be done and then it will be ready to bottle........patience is a virtue, especially in brewing.........
