1st time cider try

Thos was my first try at cider. I got a recipe from a guy at work. Started off with 10 gallons cider from my aunts apple stand. Added camden tabs and left for a few days. Then disolved sugar and honey and reserved cider. Added this to carboys(2-5 gal) with red star yeast. This worked for almost a month and a week til fermentation had stopped. Then had to rerack because I did not want to leave all the sediment in. It then sat for almost 3 months with little sediment. I just bottled it last week. Everyone that has tried it says it tastes good. To me it tastes like a semi-dry table wine. There is zero cider taste which was what I was kind of going for. Guess it just means that I have to try again. Anyone have any thoughts or opinions?

 

red star champagne yeast is powerful and ferments to a high alcohol contant.  Most ciders contain enough sugar to make  it 7-8% because of this that yeast is able to ferment out all of the sugar making it very dry but not sweet.  Try beer yeast.

 

they make cider specific yeasts, if you are interested in trying another batch. ale yeasts work fine as well, though i can't vouch for the flavor profile, as i have yet to brew one up.

but in general, wine yeasts are more alcohol tolerant and will ferment 99% of the fermentable sugars in a must, leaving you with very dry cider every time. if you want something other than a fruit wine, i would use a cider or ale yeast.
