Cider having it naturally ferment
so I decided to make a batch of cider having it naturally ferment. It sat a few days then got this thin blanket of moldy stuff on top. It was solid enough to gather up with the end of a stick. Things seem to be going well now, fermentation wise. The blanket of moldy stuff is gone and it has the usual frothy bubbles on top (little ones bubbling up from the bottom),although it has some solid spots of white mold on top of the bubbles. It smells like good fermenting cider...so I don’t know whether or not I have lost this batch. Should it be concerned? Any ideas to what might be going on would be great. Also if the cider is bad, can I continue to ferment it and turn it into apple jack at the end?
