cider spice ideas



I've got a gallon of cider fermenting and can't wait for it to finish.
I would like to add some cinnamon and vanilla, do I add it before or after
it is done fermenting?
And how much would you advise.
I' sure it's not much, maybe and 8th of a teaspoon or just a dash?
I'm going with just a drop of vanilla.

Any advice on the cinnamon measurement?

I just racked my cider into the secondary yesterday, and it still needs a lot of aging.  From what I can tell, you should add any flavors or spices to your cider when you rack it to your secondary or even a bit after (although, someone with a bit more experience in cider may correct me).

When adding spices to beer, I always found that it was better to err on the light side of things rather than adding too much.  Too much of these spices will really overpower whatever they are going in, so you should be careful.  A lot of this, though, is about your personal taste, so what is too much to me may be too much to you.

 

old fashioned tastes, cinnamon candy was a big thing way back when.
For a first attempt at any thing, you're right, I would rather not have enough, and see other folks
enjoy it, then have it ruined with to much cinnamon.Which you have to be careful with anyway.
