Cider with light brown sugar & clover honey




I going to make my first hard cider next month. I plan on only adding 1 pound of light brown sugar (about 2 1/4 cups) and 1 pound of clover honey to 1 gallon of heated up cider so it dissolves easy. I'll probably be using some pasteurized cider from an orchard. I'm planning on using my 6.5 gallon bucket too which has also has had 4 batches of beer fermented in it and I isn’t going to worry too much. I'm just going to clean it with B-brite (soaked for 30 minutes) and then sanitize right before I make the cider with 1 step for a couple minutes. I'm going to ferment in the bucket for 2 weeks, then rack to secondary in a glass carboy for 3 months, then bottle. Good luck and post your results.

Cider Choice - Yes, that sounds good. Double-check the ingredient list to make sure there are no preservatives. Note: Ascorbic Acid is commonly added, and while it has minor preservative qualities, it is just Vitamin C, and will not stop your cider from fermenting.

Added Sugar - not necessary. Depends on what you like. You might want to try not adding sugar since it is your first batch, and see if you like how it tastes.

Aging - Cider gets better with time. However, it is quite drinkable. It depends a lot on what you like.
