Cider Yeast
I am making my first batch of cider and selected this yeast from the LHBS. Has anyone tried this? Comments on results? Thanks.
Also, I have a few recipes that discuss the use of lactose at bottling time. Is this necessary? What does it do?

I have done the yeast trial thing with cider many times before and have found that in general the commercial wine yeasts are generally pretty similar, enough so that I have, when using packaged yeasts at all, gone to using dry packs of basic Red Star yeasts, i.e. Pris de Mousse, Champagne, Montrachet.
A good wild yeast, however, is another story altogether, and makes a much better cider if worked with properly.
