Fermentation kills pathogens?



Just wanted to know that if I use unpasteurized apple juice, will fermentation effectively kill bugs like e. coli and the like?

I don't want to heat the must and would like to experiment with wild yeasts, brett., etc.

Thanks in advance for any help.



 

you always want to try to use the unpasteurized apple juice. if you use a yeast, it will over power the natural yeasts and control fermentation, then the alcohol produced will kill of the beasties.

if you are trying for a spontaneous fermentation from the natural yeasts, then only unpasteurized will work.

you can still heat up the must without killing the natural yeasts, just don't boil it. this is effective if you want to dissolve any additional sugars in the must, as well as if you want to mull some spices for a bit to flavor the cider.

watch out for mold tho they will form on the top if your brew is infected, and the spores are hearty bastards.
