First time brewer
After doing some research, and talking to friends who have brewed cider before, I plan to try it myself for a small party I'm throwing in early November (ie. I won't have the time to really properly age it in bottles.)
My plan process goes like this:
1. Simmer 5 gallons of unpreserved, UV pasteurized cider while mixing in 2lbs of brown sugar, some cinnamon, and some nutmeg.
2. Once its cooled, place the mix into a 6.5 gallon food-grade bucket with air lock, and add yeast while stirring. Let it ferment with air lock on.
3. Wait 3 weeks, filter, and then let it chill in an airtight bucket in a refrigerator for another 4-5 weeks.
4. Drink, and hopefully enjoy it.

Does this look like a good process? Advice would be a great help.
