Hard Cherry Cider?
Hi guys,
So I am a very amateur brewer, that just came into a large supply of cherries.
I was thinking that I'd love to make some hard cherry cider, but all the recipes I've come across are for apple cider. Does anyone have any input on this?
I'm wondering if I can't just substitute cherry juice for apple juice. And that way at least I won't have issues with the pectin clouding the brew... Are there other chemical differences that would make this a bad idea though?
I suspect I should get some fruit with more tanins, since apple is usually a mix of sweet and tart apples. so maybe I should purchase some sour cherries too?
As for other fruit ciders (I'm also thinking about making percimmon since my tree is fruiting/ripening nicely), would unripe fruit work as well?
Anyway, any help on this would be greatly appreciated!

Not sure that I have heard of a Cherry cider, but you can always look into a cherry Lambic recipe. Either sounds entirely too sweet for my taste. Maybe to try something a little different you could make a hard apple cherry cider. I would ferment a hard cider, then in the secondary ferment over a bed of cherry mash. Its your world, be creative and let us know if you have good results!
I'd think that you would want to wait for the fruit to ripen first.

hmm... maybe I would try a cherry lambic. I think I'd like to stick to straight cherry juice if I can though... I'm hoping it won't be too sweet, though if all the sugar gets eaten into alcohol.... But then again, maybe there is a reason I've never seen straight cherry cider.

I guess I meant part unripe so there would be more tannins to add to flavor, and half ripe, so there would still be sugar to ferment out... since, at least in regards to percimmon, there really aren't any tart varieties that I know of.

You might try adding a cup of strong brewed black tea for the tannins. It's a little more mellow and less likely to cover up your cherry taste.
What kind of volume of cherries? How are you going to convert them to juice? Just curious.
