Hard cider with cranberry and honey and what yeast
I'm making hard cider and I want to add cranberry juice and honey to it any ideas on the amount? And what yeast. I'm going to use 4gallons of fresh unpasturised cider and I was thinking of 2 gallons of bottled cranberry juice and half a gallon of honey. Will this be to sweet, and what type of yeast. Thanks for any help.
sewer_urchin posted a recipe for a cranberry cider here a while back. That should give you some ideas on where to start. He used white and brown sugar instead of honey, and fresh cranberries. I want to put a batch together this fall, just need to pick up another carboy first.
You can easilly substitute honey for the sugar in the recipe I posted. I'd use just a bit more if you are...maybe 6 lbs of honey for a 5 gal batch. Red Star Champaigne yeast for this one all the way!
