making Cider...procedural questions
thanks for the tips. i tasted it when i racked it to the secondary and it didnt taste off, but it sure as heckfire didnt taste like any apple cider i have ever tasted. i should bottle it this weekend and taste it again.
i guess i'll post in homebrewing and ask for some input regarding calculating the amount of sugar needed in priming.
if you need it sweeter when you drink you could always hit it with a little simple syrup in the glass before you pour (1 part each water and sugar boiled then cooled), or get the sugariest bourbon you can find and make a "Johnny Jump Up", which is a big shot of bourbon at the bottom of a glass of cider.

thanks, i had already planned on bouncing it with bourbon or brandy if the final cider does not develop well.
i just popped the first bottle of the cider at 2 months old.
it is perfectly carbonated, i wanted it to have a crisper bite and it does. the taste is still green, however. it is not bad, but not very apple-like.
it may need sweetening, but i will reserve judgement until it has had more conditioning. i will taste it again come late october.
