Making cider for Wedding

I'm making a cider for my sisters wedding and I just want to know if I'm doing this right. I'm fermenting in the primary for a week then transferring it to the secondary until it clears. Then I'm adding potassium sorbet with a 1/4 cup parboiled cooled water and let sit for a couple more days. Sweeten to taste and put in keg and force carbonate with 30 lbs. pressure. I'm also wondering what is better to sweeten with corn sugar or regular table sugar as artificial sugars is not an option.

Sounds like your good to go. Corn sugar or table sugar will give you about the same results, but why not add cans of apple concentrate to bring out the apple flavor, and sweeten at the same time.

 

Frozen can stuff? Sounds better than sugar, how much per 5 gal.

You are going the right way and i suggest not to confuse at this time use your own technique as i didnot find anything wrong with it

 

Ryan, how'd the batch turn out?  That's pretty cool, home brewing cider for an event.  Did you have a back-up plan, just in case, or were you confident enough with your technique?
