My first Cider attempt

Hey All,

So my stuff for beer brewing isn’t quite ready, so I thought I'd put what I have to good use and throw together a Caser.
Let's try this recipe on for size:

6 gallons Apple Juice
7.5 lbs wildflower honey
WY 1026 for primary fermentation (just the apple juice)
Champagne or other yeast for secondary
Options:
I was thinking of caramelizing up some dark raisins with some brown sugar, deglazing with some chardonnay and then adding that after the honey is mostly fermented out.
I'm also considering adding some cinnimon sticks 'round raisin time.
How's that sound for a crack at it?

 

Welp, started 'er up last night. Just six gallons of apple juice at 1.050 with 1/3lb of brown sugar and a bunch of bread yeast boiled up for nutrient. With a nice big slurry of WL 001 courtesy of Schlafly.
I'm going to pasteurize some honey tonight or tomorrow and add it to the mix, the caramelized raisins when I rack to secondary.
Some cinnimon and vanilla are still options...
