I have been looking online for some cider recipies.  I am thinking of making three batches, a dry wine like cider, a carbonated frothier brew, and a yeastless natural cider.  Will variations in the kind of yeast I am using net me the dry vs frothy cider?  I am relatively new to brewing, I've done a few batches of mead but that is it.  If you have any advice, or recipies, or reccomended begginner text it would be much appreciated.  I have seen some cider recipies with various spices, cinnamon, nutmeg, etc.  I had mixed results with the mead adding in additional flavors because I had incorrect quantities, I am hesitant to add much to my first batch, but I'm interested any spices you usually add to your ciders.

Also I am living in upstate New York, and if you have any reccomendations for cider blends that would be helpful too.



 

your cider will definitely differ in taste based on the yeasts you use. for your dry wine like cider, use a champagne yeast. for your frothier brew, it depends on the taste you like; in my experiments the apple-est tasting cider after fermentation has been achieved using white labs english cider yeast. but any ale yeast do.

i posted a base recipe in another thread here, "potential completion". check it out, use it to build from, compare it to others. in essence, you can throw any yeast into any preservative-free apple juice or cider and it will ferment. monkey with the recipe a bit, and it will taste awesome.

i use spices, as you will see in that thread. but dont be dismayed, the final product didnt taste like the spices, it was very apple tasting, with apple nose, and a hint of spices on the tongue and in the finish. the seattle guys (rubberchrist, erock, slidillon) did some taste testing for me, so you could PM them about their impressions if you wanted an outside opinion on flavor.

as for ciders to use, i would go to a nearby orchard during press and get some fresh cider. it will make awesome hard cider. it cant be beat. but anything you buy in the store that is not preserved will make you a cider you will enjoy.
