Some cinnamon and allspice
I plan on making another batch of cider this fall. My first batch, 2 gallons, I just added some cinnamon and allspice and it came out great. I have seen some recipes for mead with small hop additions and was wondering if anyone had tried this with cider. Maybe Ill just has to experiment myself and see how it comes out

On my first attempt to add hops to cider I added Chinook hops after primary fermentation and pulled the cider off after two weeks to begin secondary fermentation. I did this because I wanted to have some way to control the bitterness. In hindsight the cider was too dry and the end product tasted like hard grapefruit juice. Which wasn't totally awful but not what I was going for.

I don't know how the hopped cider is, (haven't done that yet), but I did put some oak cubes into a batch of plain cider. It seemed like it might be good.
Has anybody done this? I am planning on letting it age for about 8 weeks.
I'll post later with the results.
