strong alcohol taste

my cider is aging I put a infusion stick in to speed up the procss after two weeks the is still not alot of apple taste or apple pie taste
no cinnamon taste period. what can I do to improve the taste I used to make apple pie with everclear trying it this way but not very tasty any suggestions.

 

Did you add sugar to your cider before fermentation to increase the gravity?  Also, what yeast did you use?
