Suggestions for cider yeast?
I'm attempting my first ever cider, and as I'm making it for a big tailgate-type party for friends I don't have much room for error. Any suggestions for a yeast to use? I'm shooting for a sweetish, sparkling, ~8% ABV cider. I'm not planning on using champagne or WL cider yeasts as everything I read says they will make the cider too dry. I'm also planning on using some brown and/or turbinado sugar so there's some unfermentable left to sweeten.
Tentative ingredients:
6 gal unfiltered cider
2 lbs dark brown sugar
1 tsp cinnamon

Red Star yeast has worked very effectively for me. My cider regularly ends up in the 7-9% ABV range.
I'm currently experimenting with champagne yeast in a 1-gallon batch. I'll let you know how it turns out.
