1 gallon jugs

Can I use 1 gallon glass jugs for small/experimental batches?  The ones I have in mind are 1 gallon jugs from the apple juice I bought for my cider.

 

Ahh yes - my second question - how much headroom do I need to leave in these for a beer?  Can I make 3 quarts?

I looked into the same thing.  I was mostly focused on containers for yeast starters.  As long as they're properly cleaned and sanitized, you should be good.  Also check that your rubber stoppers fit air-tight.  I actually found some 1 gallon growlers like the ones you can get filled at brewpubs (only twice as big).  More expensive but exactly what I wanted.

There are some rules of thumb but head space required usually a factor of the yeast you would use.  You could always rig a small blow-off tube for the initial 24-72 hrs of the primary fermentation.
