Controlling Ferment Temp




Hi folks,

Just wanting to see how people are using their temp controllers to run ferments. At this stage I use the temp controller on a chest freezer and I put the probe inside the freezer. To maintain a temp in the fermented of say 18degc I set about 15degc on the fridge with a 2.5deg diff. The only problem with this is that at the different stages of fermentation the brew is putting out different amounts of heat so a few days later I find I have to raise the temp of the freezer to keep the brew at 18deg. I was thinking of putting the probe to the side of the fermented and setting the controller to 18deg with say a 0.5degc diff but I worried that this will cause the fridge to cycle on off too much. I've also set the min time to run for the freezer of 8min. is any one else doing it this way?? I thought I'd check b4 I try a brew with it.

If the probe is stainless steel and you are confident with your sanitation you could put the probe directly into the worth. Some would advocate against this as I did when I first started off - but now I am more confident with my processes I do it for some ferments.
Another way is to cover the probe with a piece of foam insulation and tape it to the outside of the fermented. The temperature will be about 0.5c difference to the worth temp depending on whether you are cooling or warming.
I use an old Tucker box chest freezer and have had no trouble with the cycling.
I would recommend that you don't have a minimum run time as sometimes it only takes a few minutes to drop to required temp - depending on the ambient temp.
