Alright, well I decided to go with brewchez's suggestion and put in a tee and straight up to an elbow then to the valve.  Everything looks good, I have everything I need except for a recipe and the ingredients.  Any suggestions on a good first all-grain beer excluding lagers?

Uhoh.. I guess I am on the hook now if your efficiency is like 20%???

I would suggest if you like hoppy beers going with an APA / IPA. If it comes out a little too dark or a little too light, it will still fit a nice drinker. If you miss your mash temps too high or too low, it will still give you a nice profile. The community brew APA we did back a few months ago is good, but if you just want to keep it simple, plug into a calculator like www.tastybrew.com and figure maybe 10-12#s of 2 row pale, .5 # crystal 40, bitter with whatever hops you like to 35-55 IBUs or so, pitch a california ale yeast, and brew it. Keep really good notes about your temps and temp losses throughout the mash, so you can dial in future batches.

If you do not like hops, a basic porter recipe is good, same reason if you are off a bit, the style can range so much.

 

Well, I built the three channel manifold with a tee up to an elbow and out to the ball valve, and have brewed two batches since.  The first batch is an APA with about 65% efficiency.  Then, this past weekend I brewed a pumpkin ale (one of my favorites) with 77.5% efficiency.  So, it is safe to say that the design I went with works just fine and the air locks are bubbling.
