Got my Colonna corker today!
Does anyone cork their Belgians? I just bench mounted it, and it is awesome! Cant wait to start filling up some lambics! (got to brew my blending fruit beer first though)
I've been known to steal my LHBS owner's Italian floor corker for extended periods of time. The corked and caged bottles make for a killer presentation and makes me want to bottle everything that way.
Got a floor corker off of CL a while back cause it was a great deal but I haven't used it yet. I'm planning a really big Belgian for later this month that I think I'll cork and cage I also am really looking forward to it. What is the shelf life of a corked beer as opposed to a capped one? any better? Do the bottles need to be stored on their sides like wine or vertical like usual?
Thanks

It really depends on the style, if it is sour with active wild yeasts, they become more complex as they age and lambics can age 2-10 years, properly corked, and at a good cellar temp 55-60 deg.
that is my plan at least.
For the corked belgians I use a hand corker, cost like 5 dollars. Of course it took me an hour to cork 12 750ml bottles. If I was ever bottling a whole 10 gal batch I'd. Get a bench corker, great pick up man. The make great christmas presents. With a lable and a bow your all set.
How about some pictures? Come on man.....
I picked up one of the colonnas about a 2 years ago and love it. I can cork champagne style, wine bottles, European size caps as well as domestic.

sorry, I was answering this post on my blackberry the first time, didn't see it was Thirsty posting? you've never corked your belgians? what the hell man, and you call yourself an enthusiest, ha ha. 1n1m3g hooked me up with a case of belgin bottles a couple of years ago, and I bottled my first grand cru with them, came out fantastic. One of the people that I gave it to for Christmas that year just got around to drinking it last month, they where awestruck at how good it was. So there's your answer, after 2 years in the bottle, still the cats ass. This was the one that took 2nd in Catagory in the Patriot brewing contest., it was also my first all grain batch. i've never placed that high since, Ha ha.
