keeping extract

Alright I have a question about keeping LME.  Since most recipies don't call for nice round numbers like 3.3 # of 6.6# what is the best way to store LME, or can it even be stored? If so how long any advice would be apreciated thanks.

 

Well, it is caramel. You could probably wrap it up tight and keep it in the fridge for about 2-3 weeks since there's no dairy in it.

As the stuff gets added to water anyhow your only real concern would be spoilage, and not condensation which kills confection caramel (when refrigerated).

You might be able to store it longer, I just don't know when grain caramel sours.

Unless you have a pretty big bulk supply, I'd say just throw it in! A couple of gravity points never hurt anyone!

if the recipe calls for 6 lbs, 6.6 lbs never hurt no one.

round numbers may bring a man closer to jesus, but waste puts a runner in god's panty hose.

I second that.  I usually round up my extract to whole pounds just so I don't have weird amounts of leftovers.  But if its only a pound or two then I usually just add it in maybe with a little more hops too.

 

I bought one of those Williams Brewing LME close-out specials about 2 months ago.  Their LME comes in super heavy plastic bags.  So, I've been using some here & there, and keeping it in the crisper drawer in the beer fridge.  Seems to be fine.  If you got some left over from a can, I'd say put it in a clean glass quart jar & stick it in the fridge.  Then after you get about 4 or 5 leftovers, make up a WTF brew.

But, I agree with the group.  If it isn't that much, throw it on in, or use it for priming instead of corn sugar. 

God's Panty Hose, hmmmmmmm!!   Sounds like the name of a very interesting WTF brew.  lol

 

Cool, good to know.  My thinking was that some recipies call for say 2 lbs. and a can is 3.3 so ya.  I'm all for strong beer I just didn't know if that would be detrimental to flavor.

my .02 on the extract.

One bad thing about extract is that is can darken with age and contribute to off flavors.  It doesn't have nearly the shelf life of DME for obvious reasons.....there is moisture in it.

If you have a little left over, either throw it in the kettle with the rest and call it good or dip some apples in it.......mmmmmmm.......malted apples.  YUMMY!!!!

 

My $.02 is why use liquid to begin with. Unless it's free.......
