2008 BKB Spring Brew - Kolsch - Brewing thread
The extended boil will likely help you. Pilsner malt tends to generate more DMS and that takes more time to drive off. I like a minimum 90min boil when ever I use pilsner malts.
FedEx sez I'll get my stuff today. Gonna brew tomorrow AM.
I have all my ingredients except the yeast. But I can pick that up anytime on my way home from work.
I just need to find a day to brew. Wife, child and I have been sick. And now there is more snow out there too.
Now I love the cold, but I can't be standing in a frigid garage and trying to recover from illness can I???
Although this cold weather is just what I need to brew this kolsch up.
I wish the snow was here when I brewed last weekend....it would have helped cool it down after boil much quicker....
Yeast went on the stir plate last night, brewing up 13 gallons on friday. How's the snow out there? We got about 3" here and it is a steady downpour right now.
i got my supplies on monday, hope to brew by the end of this week maybe or the begining of next, as far as snow we got too much, my wife got the car stuck at the end of the driveway and my snowblower ran outta gas, GRRRRRRRRR!!!!! head hanging low calling AAA ![]()
We got about 3-4 inches of slush overnight. When I left this morning, it was a light rain. When I got to work in Framingham, it was a downpour, and very windy....
Back to the brew.....I plan on racking to a secondary for the conditioning period, provided gravity plays along. I can wait if the numbers don't look good, but I really want to get it done this weekend......
Mines been fermenting since sunday. Slowing down big time. When it clears I will transfer to 2ndary, taste, take gravity reading and put in cooler of ice water for a two week bath.
We are going to get 5 to 6 inches of snow tonight. I hate the stuff. I get up at 3:30 am as it is to get my chores done before going to work, now I might have to get up sooner and snoblow the dam driveway!

FedEx failed me. Stuff didn't get here until this afternoon. Gonna leave first thing in the morning for Colorado, gone til Tuesday. Brew Wednesday. I hope.
