Yeah that's what I'm hoping for. We'll find out in a couple weeks. I'll still drink it no matter what though ![]()
I noticed that with the kolsch. Seemed bland but when partially carbonated it was a totally different beer. As a famous oriental teacher said "patience grasshopper"!

Anyone got any updates or results on this brew yet? Mine just went into the secondary and seemed to be pretty tasty. Used the base recipe with some Honey, Paradise seeds ,corriander, orange peel and rye. We shall see but no matter what it will turn out to be Beer.!

I'll have an update next week. I want to give these bottles 2-3 weeks @ 70F before I start sampling them.

Mines all drank up. I need to make it again for the swap. I'll be doing that i na couple weeks.

Alright its been 3 weeks and I cracked one of the summer brews open. It's still somewhat bland but has a very slight citrusy taste/aroma at first and a slight spice taste towards the end. It's OK - I'm going to give it another week and try it again. I think the wyeast 1010 is a slow fermenter and conditioner. The beer looks nice and as a summer ale should look and is crisp and dry. I'm going to make this again with a few tweaks - next time I think I'll use lemon zest instead of orange and up the spices and the rye just a little.
I made a second batch and used cry havoc yeast this time, and left out the corriander.
I'll be transfering to secondary tomorrow and probably bottling this weekend.

Mine turned out, like, a little too spicy for me. I mean it's ok if you like dry beer with a lot of spice. And, I don't have a problem drinkin' it. But, it's just a bit much. Not sure which spice did it. I used all of them.
I brewed an unspiced rye after it, with a similar recipe, just as dry, & like it a lot better. It does have a good head, smooth & pretty well balanced, just kind of sharp.

Probably the corriander. My 2nd batch with only the orange peel was much better. I used same grains, and cry havoc yeast.

Mine hits the bottles tomorrow so I will let you all know soon. I agree with Deafcone about the corriander... a little goes a long way.
