I wasn't looking to stir up the pot, I was just sayin' is all.  I don't know if you can really get lager like results from a yeast like cry havoc, I've never brewed with it before.  From my understanding a cooler than normal fermentation (for an ale) and a cool secondary are hallmarks of the cali common style.  I really don't think that I'll be able to accurately replicate the style with any yeast if I'm fermenting in the 68-70F range, but what do I know?

If we decide to do an American Brown, that sounds good to me.  Thanks for at least hearing me out and giving some suggestions.



 

well if we decide on one beer those who don't have cooling methods to meet that beers specs can use ale yeasts and maybe trade some bottles with someone who did it with a lager yeast so we can see how the yeast makes a difference in the same exact ingredients with different yeasts.

I am not a patient person so Lagers aren't my cup of tea

As far as cry havoc, I've used it and like it and I would just use that instead of a lager yeast.

As far as temp control would it be possible to build a "chill box" that you could fit around the carboy and use a temp controller on. Maybe a two piece system that can be stored so it isn't in "the wifes" view.

OK I looked on the internet and found this link to build a mini fermentation chamber out of a mini fridge. Here's the link. It goes into detail and might be something that can be done and kept out of sight and not take up a lot of space like a regular frigde.
I have a regular fridge with controller but am moving int oapartment so I might even do this myself.

I think I'm going with Thirsty's Brown Ale.
I have to brew my Shrimp Slayer Session beer this weekend and it's easier to do two at once.



 

I would be happy with an American brown.
