Adding Priming sugar to Ferment
Went to a new supply shop in town and I told them I kegged so he told me to take the corn sugar that comes with my kit and add it 3 -4 days into fermentation. He said to boil it in some water for 15 minutes and dump it in. I'm assuming I would also let it cool to not shock the yeast.
My question is, has anyone done this? I'm sure it will bring my gravity up but what will it do to the taste? Will it just dry it out?
My other question is they didn't give me an ingredient list with the kit. Do some shops keep them a secret? I want to plug in what I made in Hopville.
Corn sugar is just another adjunct.
4oz will add about .003 to your Specific Gravity, and is hardly enough to make any serious contribution to the taste.
You can just add it to the boil, no need to wait.
On the other hand, I've been putting about 2oz. into my kegs, dissolved in boiling water, just before filling , then charging with 20# of CO2, through the liquid side.
They carb up outside the kegerator in about 3 days.
This is a lot more than 4 oz. Maybe half a pound. So maybe it is part of the recipe. Weird.

Adding it during fermentation will just turn the sugar into alcohol. it won't carbonate the beer during fermentation. it won't contribute to taste at all. it could dry it out of you add enough and it could even could add a minor twang to the beer if you use too much. if you want to sweeten the beer use lactose, it doesn't ferment.
if you're doing it to add alcohol then just add it during the boil as suggested. sugar doesn't boil off. if you want to use it for carbonation then wait till fermentation is complete and you are ready to bottle or keg, then boil the sugar in some water and add to bottling bucket or keg and transfer beer onto it.
