Alcohol Boost
It is a little up in the air. The recipe and process say approximately 17 days, but this can vary a bit. The recipe is in the September issue of BYO and is by Sam Calagione of Dogfish Head Brewery.
I haven't done an extract recipe in a while, so I think this will the next batch I make. It seems intriguing.
Also, I should note that this beer is supposed to age very well, which isn't surprising based on the high alcohol %. I plan to keep a few bottles to age as well.
Thanks for all that info. I've been planing a big beer and after reading that I want to go really big! (shooting for 12%)
Sounds interesting, I might check it out, I need to fill some kegs and let them age so I'm not always tempted to refill them.
I am planning this one for next batch. Since I am looking for an extract recipe for the next one (see my post on overnight mashing), this one fits the bill. I will probably try to do this in a couple of weeks, so I can have a few bottles while we are still in the winter out here. The rest will have to wait until next winter.
