Big Brew Boil Times.......

Do not be afraid to overpitch! I really don't think 2-3 quarts is enough, or will be a struggle at best. A pound of DME in a 1 gallon starter I would think would be minimal- again you got a big beer here. I've got two 3 quart starters of wl530 going right now on the stirplate for my dubbel being brewed on friday, and I am nervous about that pitch rate. I am very excited about this one, having some thermometer issues myself so I need to get that dialed in before then, but really am giddy at making this beer! Love thy Belgians!

 

I never thought of pitch rates.....let me run over to Mr. Malty....

Mr. Malty says I need 2.65 qts with two vials for proper pitch rate.......I think I'll go with the two vials and full pound of dme, and also push to 3 qts.  Right now, I'm limited on starter size....I only have this one mini water jug, hold 3.5 qts I think.  Used it before, so it's good.....

Hmmmmm, maybe a new 3 gallon carboy is in order?........

Instead of getting a larger vessel, you could make a starter, let it ferment out, cold crash it and decant the liquid and then step it up with fresh wort.   I only have a 1L flask so if I need to make a larger starter then I follow that process.  Seems to work for me.

Make your starter in your primary fermentor.  No harm there.
Then you can try and decant, or siphon right on top of it.

I have done it that way before and it works fine, just be clean thats all.
