Boil process
What effect would leaving the boil pot lid on during the boil? I ask because not many people seem to cover the pot during this time. I did a batch last night with the lid on and only had to add a little over a gallon to the primary to make a full five gallons(Doing a 4 gallon boil). Usually this takes over 2 gallons to top off.
the lid is left off to prevent DMS. Dms will form in the wort and then get boiled off in the steam, but if the lid is on the pot, the steam will condense there and drip back in, putting the DMS back in the wort. Dms gives a corny vegetable flavor.
If you are using extract then you don't really need to worry about DMS during the boil. Whoever made your extract dealt with it already.

Boil over is much more likely with the lid on.
Thanks, I figured there was a good reason
You also get very little evaporation loss. so if you are planning to lose 2 gal over a hour boil you will just end up with a really watery beer, and a low OG. I think that point was assumed in previous posts but i thought that i would point it out.
