Brew best scotch ale

Hello,

OK new brewer, I’ve done two batches already, the first batch was a Brewers best scotch ale, right now it is drinking fine. second batch an Irish stout brewers best, it is in secondary ferm. as of this post. the third batch we did yesterday (04-01-06) it is a strong ale AKA; Arrogant Bastard clone (malt extract recipe). When I woke up this morning it wasn't bubbling. We put it in the fermentor around 7:00 pm. it is now almost 10:00 the next morning. The yeast we used (WPL 001) was very fresh bought at the local homebrew shop. and the owner of the shop said we should be able to just pour it straight in ( according to the usual guidelines ). So is likely that there is something wrong. Should it still be bubbling pretty vigorously. I just hope I can salvage it at some point. I'm really freaking out here!

Thanks for your help!

I wouldn’t worry too much yet if it's not fermenting vigorously, I have had several beers where the next morning it was not fermenting quite the way I expected. Sometimes it takes up to 24 hrs to real start going.
As per ph137's comment, using a yeast starter always seems to help out. If you are not familiar with the method, here's an article I found. http://www.ebrew.com/primarynews/yeast_starter_beer.htm Basically, you just take a small amount of extract and make a small wort about a day before you do the big brew. Pitch the yeast in, and let it sit over night to really get the yeast count up there

Good Luck!!

Thanks for help david,

How about posting that Arrogant Bastard clone recipe here?

I also posted in response to you over at beer advocate. A starter will solve all your woes. It's a good habit to get into anyways, it'll make most of your beers turn out a bit better, especially the high gravity ones. Pitching just one tube into a high gravity ale puts a real strain on the yeast, and you can sometimes end up with some off flavors as a result.

Thank You!!
