did i mess up somewhere on my Hefe




Ok, so i decided to attempt a partial mash hefeweizen by coming up with my own recipe by using hopville's website.  first off, here is list of what i came up with:

3 lb Dry Wheat Extract
2 lb Pilsner Malt
1 1/2 lb Wheat Malt
4 oz Crystal 20
4 oz Cara-Pils/Dextrine

Estimated OG - 1.049
Estimated FG - 1.012

For the mash i did it on stove top with a grain sack and used 1.25 qt/lb ratio.  when i took temp readings, inside the sack with all the grains it read around 146 F while outside the sack read 155+.  when the hour mash was over, i sparged with 1 1/2 gal of water and began the 2 1/2 gal boil.   I did have a small boil over where some of the hot break spilled onto the stove cause i stupidly got destracted talkin to someone of course haha.  so on and so on after i cooled the batch down after the boil, i poured the wort through a strainer to get most of the hops out and tossed out the bottoms with hops and cold break, which was about 2 or 3 cups of wort.   i used wyeast 3068 for my yeast which i had smacked about 8 hours prior to brewing and was swelled all the way up.   I added the yeast at about 75 deg and shook the hell out of my bucket to aerate for about 5 minutes.   after that i took out a sample to test the OG and it only came out to 1.034.  i poured the gravity reading wort into a clear glass bottle as a test sample and stuck it with my fermenter, which was equipted with a blowoff tube.  The batch really only fermented for a couple days where i had bubbles coming out of the tube.  i gave it a week anyways and got 1.006 for a FG and the beer in my sample glass was crystal clear.

Some of my questions are: 

Did the web site not give accurate measurements and readings?
Did i need to raise my mash temp to extract more sugars, possibly need more water during the mash or sparge?
Did i pour to much wort down the drain to achieve a higher OF and FG?
Shouldn't hefe's be normally foggy and not  crystal clear due to the use of wheat and the low flocculation of the yeast?

If anyone can give me some good constructive criticisms as to what went wrong and what i can do better, i'd appreciate it.



 

I am not entirely sure but I believe most take the OG reading before adding the yeast. This would affect the reading you get in comparison to others that may be taking the reading without the yeast added. I have never checked the difference before and after so it might not make a big difference.

 

Looks like it should be 1.049 if your mash had 75% efficiency. With the temperature inside the bag at 146 you got very poor conversion. At 148 degrees, I generally mash for at least 90 minuted for full conversion.
