do i have to use sugar
aside from the malt extract do i really need to use sugar as well during my boil or use sugar aside for bottling?
Nope. Not unless you want to. You can fermentable or unfermentable sugars... honey, lactose.. whatever.
In general, if you add more highly fermentable sugars such as corn sugar or honey to a brew, you will provduce a dryer, lighter flavored beer with a higher alcohol content than the same recipe w/out the extra sugar. If you add unfermentable sugars such as lactose, you will add a bit more sweetness as well as some body to your beer. The use of extra sugar is completely optional, though. If you are following a recipe that calls for this, you can always leave it out, and I would bet that it will turn out ok anyway.
