The Doomed Brew...
I would think the point of forums such as this are to share ideas and techniques to improve what you are already doing, not that what you are doing is wrong or may cause a problem but to improve the overall product and the process of making the product and to share ideas to achieve this. I'm not sure I would call this "stressing out" but striving through the knowledge obtained through experience and other's experiences to continue to improve the product that is obviously of fair importance to those posting here.
Here are a couple of good links to articles about hot/cold break and the effect of rapidly cooling wort to help with chill haze, just thought that I would share them with you guys.

Well Said Andrew, this is a learning experience outlet for people of all skill levels.
OK, here's another update. The doomed brew was bottled last night. Those who helped out took a quick taste and definitely tasted some off flavors. Honestly, bottling last night was more about getting some more practice bottling and figuring out ways to do things better.
I did learn a good lesson last night. I learned to re-read the discussion on cleaning bottles. I'll definitely be using Wheel's suggestion to keep a bucket of sanitizing solution on hand, rinse the bottle out, then dump into the sanitizing solution right after drinking.
I'll let the bottles condition for about 1-2 weeks before I open the first one, but I can't say I'm too hopeful after the tasting last night. The next beer I'm working on is turning out fantastic, though, so I'm anxiously looking forward to bringing that beer to bottles...
