Efficiencies
Did they claim to have 90 all the time or just having a lucky go?
I've seen people claim there system is cranking out 96% everytime. I don't think it's even possible from a brewing standpoint. The resulting wort at 100% wouldn't taste like beer due to the processing involved to extract that much yeild from the grain.
Same, a lot of the people claim that they have 90+ consistently, but probably most of the people do claim it to be a one time occurance. I also agree that it is pretty much impossible to get that in a homebrew set up.
Just out of curiousity, what type of efficiencies can a good sized microbrewery get?
It would depend largely on what their system is. For them it's more about repeatability than getting the highest efficiency possible. It would only be with the really big guys that bumping up efficiency a few points could save a lot of money. I don't have any numbers, but I'd guess the small to mid-sized craft brewers are anywhere from 70-85% efficient.
I am going to be meeting with a Bay Area microbrewery owner, and I can check with him as to what kind of effeciencies he typically gets.
