favorite yeast

I used WLP005 in a bitter once.
I remember it was still a good choice when compared to WLP002.
It does ferment a little drier, which seemed to help the hop character some, however that does reduced the esters and maltiness a bit.. compared to WLP002.

For an English IPA, it would be a fine yeast to experiment with.  Crisper finish would work I think.  Just maybe add a little more victory or biscuit malt to your IPA to help hold up the malt flavor with the drier finish.

The simplest way for me is that I plan my brew day around the racking of a previous beer.  As the new wrot chills in the kettle, I'll transfer the beer that was previously brewed on the yeast that I want to reuse to a keg or bottling bucket.
Then I take a completely sanitize jar and scoop about 500ml of yeast slurry from the cake out of the bottom of the empty fermentor.  I cover it with foil until I am ready.
The new beer goes into a clean fermentor, gets aerated, then I pitch the 500ml slurry of yeast.

You can be more specific with the amount you pitch but this is the way I do it when I am lazy.  It works for me.

 

The batch I have going now with the 005 is churning like crazy.....granted, there is an awful lot of sugar in this batch, but it's bubbling non stop to the point where I wish I used a blowoff first....and it smells great too!  I plan on collecting some yeast slurry from this batch for the future.....

Not that it helps you know but, later this year I am planning to brew up a 12 gallon batch of English Pale, then break it into several smaller jugs and do a side by side yeast comparison.

I brew alot of beers with Safale-4 or WLP002.  But I really want to see how the other handful of yeasts work in my normal process.

I'll surely post those results when I finally get to it, maybe this spring.

I like those charts too.  I want to get the big white labs poster for my brewhouse, but haven't found one yet.

I wish the Wyeast site as a little better organized too.

i got one from white labs and wyeast, they are really helpful folks.
