fermentation question
hey.............got a suprise friday when i came home from work.........not the beer........my wifes water broke. Now I am the proud father of a baby boy........5 weeks premature but he is doing good now.
The beer did turn out to be fermented all the way. I bottled it tuesday and tried a bit tonight. It has a strange and great flavor...........honestly it resembles smitwiches or guiness but less thick. Not what I expected but none the less the beer is very drinkable.
I would like to know if anyone has any experience on what age will do to this type of beer. I have put forth the methods I used in previous posts..........I used a glass carboy.
I also tried something different...........this is a neat concept........prob not original but when I siphon off the beer to put into the bottler I always have about a half gallon left that has a lot of sediment. This time when I got to this point I stirred it up and pushed it through the siphon which filters it.......sort of.......
I wannna see what the difference in tasteis between the beer that has settled..........then bottled and the beer that was stirred a second time and then bottled.
i know that one will have catfish food at the bottom of the bottle but over time will it affect the taste, body head etc. of the poured beer. As I am always careful to pour without disrupting the sediment.I

Stirring up the fermented beer like that might have oxidized it. So be prepared for a weird cardboard taste. Might not have but could.
Congrats on the new tax break! So what did you name him? Brew Hefner?
