first all grain - silly question
Well, in about 1 week I'll be doing my first all grain brew. I will be brewing outside on a propane burner and was wondering. When brewing outside, do most of you leave the lid off? I never leave the lid on when brewing indoors... but outside, there's bugs'n'stuff.

I brew outside, and I use a lid to help get a good boil going. After that, I leave it on to help control the boil, and just in case. I never do a full boil, or extended amount of time with the lid on. There are gases and other things you want to let out, being pushed by the boil itself. Leaving the lid on will trap that stuff in, and it could affect the end result......

They won't drink much, they prefer their beer to have alcohol in it.
Seriously, it would be impossible to keep every little critter out, but I keep the kettle in my garage uncovered, and let the boil kill/sterilize what may drift in. Not a good idea to cover the boil, evaporation is a good thing.
I boil uncovered but when I start chiiling I put it back on......

This is what I do too.
I'll add that I like to spray the bottom of my kettle lid with sanitizer though, because it does form a condensate on the lid and I am afraid of stuff dripping back in the pot as the chilling starts. I uses an immersian chiller.
I keep the lid on untill it reaches a boil, then it's off for good.
