Fructose Intolerant?



Hello,

Here's a challenging one... I would like to brew up some beer for us to have on-hand at work, and one of my coworkers has a Fructose Intolerance. What recommendations do you all have as a safe beer that she could drink? And has anyone had any experience with using Splenda as a sweetener in beer?

Not that challenging really.
I don't think there is any fructose in beer.  If there is its a very small portion of the carbohydrate analysis.
I looked up the analysis of briess golden extract for comparison.  They list maltose, maltotriose and glucose as the primary saccharides.  They list higher saccharides at around 20%, but fructose isn't a higher saccharide than maltose.

Aside from that, fructose should be highly fermentable anyway.  So what little there is is likely fermented out.
You should be fine brewing any beer.

Just don't make any fruit beer as Fructose is "fruit sugar".

Maybe another biologist or biochemist can back me up here.

And whose "sweetening" their beer anyway????? (as stated in your original post.

Sorry I should have been a bit more descriptive... my understanding is her fructose intolerance is not limited to fructose but basically any sugar whatsoever, but I know she would enjoy a sweeter-tasting beer.
