Fruit extact questions.
I'm gonna be bottling some beers with fruit exctracts soon. I was wondering if I need to do anything to sanitize them first, and if so how? Also, I was wondering about flavor with using fruit extracts. I'm a little concerned that it may come out tasting like cough syrup. I'm planning on using the whole 4 oz. bottle per five gallon batch. I was wondering as to how strong a flavor will this add to the beer.
I tried a blueberry extract and it came out nice. I used roughly half the bottle for my 2.5 gallon batch, so I'd say you should be fine using it all, or maybe a little less. I didn't do anything to sanitize other than clean the rim of the bottle with an IPA wipe. Within a week the flavor was good and it started to smell great. I'm going to be trying it again with an all-grain batch I have that's almost ready.
Just sanitize the outside of the bottle and pour the desired amount in........you can add some, give it a gentle stir and taste a sample and then add more if need be!!!!
Just throw it in. Four ounce bottle per 5 gal batch. Raspberry and Cherry work nice and I still have a Blueberry to try.
The extract is usually sterile as part of the manufacturing process so there is no special treatment needed.
Dartgod has it right for adjusting the flavor. Fill your bottling bucket with the beer, add some extract and taste. Then add some more a little at a time as you go until its just right. Then add your priming sugar and yo are ready to go.
I find it useful to pull a pint of the unflavored beer to sample between "fruited" samples. It helps cleanse the palate and you can see how far you've come with the fruit flavor.

Well, I used the whole 4 oz. bottle of cherry extract and it was the perfect amount. The flavor was right where I wanted it to be. Now I just need to tweak the grains out a bit to get that just right. Thanks for the help.
When using an extract, is it in place of priming sugar? If I were planning on kegging a fruited beer, would secondary be the place to add it?
The extracts don't have any sugar in them......you would have to prime or force carb as normal......![]()

You still need to prime, but I've always heard that you need to add it just before bottling. I guess that you would add it just before kegging as well.
