Help with hefe




Put my first Hefe in the fermentor today (OG1.050) however the temp when pitching the yest was almost 78f.  Did I kill my yeast?  Been over five hours and not a single bubble.  HELP



 

Your yeast aren't dead at 78F.  They should be fine.  Depending on the temp of the yeast they may be a little temp shocked.  What did you pitch?  A vial, a pack, dry, or a starter?

Unless you pitched a starter of yeast, I wouldn't expect any activity for another 12 hours or so. 5 hours is a little quick for anything other than a start to see real activity.

 

Your beer's fine.  Yeast don't die off until they hit ~105F but try to pitch your yeast as close to fermentation temps as possible.  Also, it can take up to a couple of days for fermentation to really get rockin' though it normally doesn't need that much time. 

Just to give you some perspective, I usually see signs of fermentation within 6-12 hours, however, once I had a beer that took 5 days to take off.  I think there was something wrong with that particular packet of yeast that I used but the beer turned out fine.
