Highest % ABV

What do you think the highest % ABV that is achievable for an all grain brewer would be?  I saw a post on here a bit earlier talking in the neighborhood of 13%, which is very high, but how much higher could you go?

 

Well, the yeast, not the method (all-grain vs. extract)  would be the limiting factor, at about 5% ABV you're starting to put some serious stress on beer yeast.  There are some methods to push ABV's using different yeasts to finish.  White Labs has a high gravity yeast strain, that in the right conditions will do 25% ABV.

 

You are right, this is really a two part question.  One, how high can any homebrewer legitimately expect to get out of the yeast, and two, at what point does the all grain brewer run into such effeciency problems that you just can't get more sugar out of the grains?

 

Well you'd just add more grain.  If I wanted a 1.120 wort I might need 20 lbs, a 1.080 16 lbs, etc.  Regardless of your efficiency on your system you just add more grain to add more OG.  Realistically using standard fermentations, and one yeast strain you could probably hit 10-12%.
