History of brewing?

I am researching for a romance novel that I wish to write.  The main character is an alewife and wisewoman from the late dark ages in UK/Europe.  I would be very interested in being directed to good sources of information about the specific ingredients, equipement and breweing process a rural woman might have used around this time?
