How Do I Make a Fizzy No Alcohol?

Hi, I'd like to make a fizzy no alcohol beer to drink when I'm not wanting to be mind altered but still enjoy a good beer taste.  Not a strong beer.

What additional steps should I take for this, or what steps should I omit?

 

I've never tried to do it, but I knew a guy who didi it all the time because he loved to brew but had a medical issue with the alcohol.  He brewed a batch let it ferment normally, then heated it it to drive off as much alcohol as possible, then put it in kegs and forced carbonation.  If I can track him down I'll get more details for you.

Ive heard you could make a brew like you normally would, then freeze it.

Wash off what doesn't freeze, which should be the alcohol, thaw the ice, that should be a non aclcholic brew.

Thats what I've heard. Haven't tried it, prolly not going to.
And it wont make it fizzy.

If you do all grain, you can mash your grain at a high temp.  This will produce a more non-fermentable sugars, which won't be converted to alcohol.  This will not give you a beer with no alcohol, but will lessen the alcohol content.  Plus you can still bottle condition your beer and have carbonated beer.  Not a perfect solution, but maybe worth a try.

It would taste like drinking beer flavored sugar water.  I think a high mash temp would help, but you're still going to get 3/4 of the alcohol you would brewing it normally.  You'd have to remove the alcohol at the end of fermentation to get anywhere near zero ABV.

Agreed.  I guess that I just don't see the point of brewing beer without any alcohol.  I would think that any method of removing the alcohol after the beer is done (at least any method available to the average homebrewer) would seriously change the flavor of the beer.

Yeah, it would but it's really the only way to do it, without letting the yeast ferment, you're not going to get a product that tastes like beer.

 

Have you ever tried Malta?  It is a childrens beverage from Latin America made by cervecerias.  It is basically unfermented wort.  While it is good, it is very sweet and taste nothing like beer.

 

We buy beer here all the time that is of the commercial non alcohol type.  just wondered if i can make some of my own for a nice  ice cold drink on hot summer morning.  yeah, me and mom could go for that.
