just kegged stout
kegged my first homebrew ( a stout)...have it sitting at 12psi, waiting a week for it to carbonate. problems is, I tried the flat beer right after I kegged...ahhhhh, it was bad, bitter. I thinking that since I usually bottle it and don't get to taste it for another 3 weeks, it is more mellowed by then. Question is, will the beer continue to condition in the keg even as it is getting carbonated, and thus get better? It's undrinkable right now.
Posting the recipe sometimes helps to.
Aside from that patience is required here. Sometimes green beer just isn't all that great. Give it a little time. Carbonation often does wonders for beer.
Have you ever tasted your beer pre bottling before? I assume it doesn't have this problem in those cases.
Carbonation does wonders. Wait a few weeks if its not where you want it. It will be fine don't worry. Its just a big bottle. Might take longer to condition, but it will be great.

I just kegged my RIS and it was pretty harsh when I put it away last June, but it's really smooth now.
I'm hoping around New Years it should be just right.

thanks for the replies...usually tasting the flat beer before bottling it's not bad...this was pretty bitter, but it was about 7.5 abv...as of today, 1 week since kegging, it is better, a little foam head, but still harsh. Have 2 weeks before bringing it to xmas party, so hopefully should mellow out....Merry Christmas!
